Instructions:

2. Prepare the Salmon:

  • Place the salmon fillet skin-side down on a large piece of plastic wrap. Make sure it’s on a flat surface.

  • Sprinkle the cure mixture evenly over the top of the salmon, covering it completely. If using, drizzle the vodka or aquavit over the top for added flavor.

4. Wrap the Salmon:

  • Tightly wrap the salmon in the plastic wrap, ensuring that the cure mixture is in contact with the fish. Place the wrapped salmon on a plate or in a shallow dish.

5. Weigh It Down:

  • Place another plate on top of the wrapped salmon and add some weight (like canned goods) to help press the salmon as it cures.

6. Cure the Salmon:

  • Refrigerate the salmon for 24 to 48 hours. During this time, the salt and sugar will draw out moisture from the fish, transforming it into gravlax.

7. Rinse and Slice:

  • After curing, unwrap the salmon and rinse it under cold water to remove the cure mixture. Pat it dry with paper towels. Use a sharp knife to slice the gravlax thinly at an angle.

8. Serve:

  • Serve the gravlax with bagels, cream cheese, capers, and additional fresh dill for garnish. It’s also great on its own or as part of a charcuterie board.

  • Store any leftover gravlax wrapped tightly in plastic wrap in the refrigerator. It can last for about a week.
