Ingredients

For the Filling

  • 4 ripe peaches, sliced (or 1 large can peaches, drained)
  • 2 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

For the Crisp Topping

  • ½ cup old-fashioned rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • Pinch of salt
  • ¼ cup cold butter, cut into small cubes

Instructions

  1. Preheat a grill to medium heat or prepare a campfire with glowing coals.
  2. In a bowl, combine the peaches, brown sugar, granulated sugar, flour, cinnamon, nutmeg, vanilla, lemon juice, and salt. Stir until the peaches are evenly coated.
  3. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
  4. Lay out four large sheets of heavy-duty aluminum foil. Divide the peach mixture evenly among the packets, then sprinkle the crisp topping over each portion.
  5. Fold the foil tightly into sealed packets, leaving a little room inside for steam to circulate.
  6. Place the packets over medium heat on the grill or on a grill grate over hot campfire coals. Cook for 18–22 minutes, turning once halfway through, until the peaches are tender and bubbling.
  7. Carefully open the packets, allowing the hot steam to escape away from your face.

Serving Suggestions

Serve warm right in the foil packet, or transfer to a bowl and top with a scoop of vanilla ice cream, whipped cream, or a drizzle of caramel sauce.

Cook’s Tip

For an extra touch of sweetness and crunch, sprinkle chopped pecans over the crisp topping before sealing the packets. If fresh peaches aren’t in season, apples, mixed berries, or cherries make excellent substitutes using the same cooking method.
