Ingredients:
- 4 boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- Salt and pepper, to taste
Instructions:
- Preheat the grill to medium-high heat.
- In a large bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
- Add the chicken cubes, bell peppers, red onion, and zucchini to the bowl, and toss to coat the vegetables and chicken in the marinade.
- Thread the chicken and vegetables onto skewers, alternating between the different ingredients.
- Grill the skewers for 8-10 minutes on each side, or until the chicken is cooked through and the vegetables are tender.
- Serve the skewers hot, garnished with additional fresh herbs if desired.
