Here’s a recipe for a delicious dish that is perfect for Bedford, Ohio in the spring:

Ingredients:

  • 1 pound asparagus, tough ends trimmed and cut into 1-inch pieces
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Lemon zest for garnish (optional)

Directions:

  1. In a large pot, bring the broth to a simmer over low heat.
  2. In a separate large pot, heat the butter over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  3. Add the Arborio rice to the pot and stir to coat with the butter, onion, and garlic mixture. Sauté the rice for about 2-3 minutes or until the rice is slightly translucent.
  4. Pour in the white wine and stir until it is completely absorbed by the rice.
  5. Add 1 cup of the simmering broth to the rice and stir constantly until the liquid is absorbed. Repeat with the remaining broth, adding 1 cup at a time and stirring until each addition is absorbed. This should take about 20-25 minutes.
  6. In the last 5 minutes of cooking, add the asparagus to the pot and stir until it is tender and bright green.
  7. Remove the pot from the heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
  8. Serve the risotto hot, with a sprinkle of lemon zest on top if desired.

On Saturday, September 7, local Boy Scout Troop 399 will hold a chili cook-off and auction at The Lutheran Church of the Master from 5 to 8 p.m. The church is located at 860 Northfield Rd., right next to the Bedford Giant Eagle.

Funds from the event will help defray the costs of a trip the scouts plan to take next summer. The troop has the opportunity to go to the Northern Tier, one of the high adventure Scout reservations. They will spend seven days canoeing and camping in Minnesota.

For $10 per person, an attendee of the fundraiser will get a taste of each chili, cornbread, sides, and drinks. Once you pick your favorite chili (and vote on it), you can have a big bowl of the version you liked best.

The competition is fierce every year. At the last two cook-offs, Scouts Josh Armstrong and Richard Rosario won for their Memphis-Style Pulled Pork Chili and White Chicken Chili, respectively. One of the leaders, Mrs. Cashman, won the title the first year. Will one of the boys win again this time? Or will one of the adult leaders take back the title? Only you can help decide!

In addition to the great chili options, there will also be a bake sale, with a wide variety of tasty treats made by the families.

Rounding out the events during the evening is an auction, which will include items such Indians tickets, Kings Island tickets, and an Akron Rubber Ducks VIP experience, to name a few. Themed baskets such as ones for BBQ, for Camping, and for Family Game Nights will also be up for grabs. Other auction items include certificates good for a smoked pork shoulder (the same kind that was used in the prize-winning chili mentioned before) and lawn mowing and weed eating services provided by one of the Scouts. Hand-crafted items are available, too.

Keep your eye out for other fundraisers the boys are planning throughout the year to help pay for their upcoming trip.

It’s Almost Vacation Bible School Time

As school is winding down for the year, parents are probably already preparing to hear the choruses of “I’m bored!” from their children. One tradition for many churches is to hold a Vacation Bible School for one week in the summer. A VBS program typically runs for a week, where the kids learn about God and the Bible while having fun with other kids.

Signs will be popping up around the area promoting each church’s VBS. Parents will have a wide variety of themes and denominations to pick from.

Bible Baptist of Bedford, which is located at 20 Avalon Drive, off Columbus Road, will be having their Vacation Bible School June 11th through the 15th from 5:45 to 8:30 pm.

The theme for the 2018 Vacation Bible School is Time Lab – learning about Jesus from Eternity Past to Eternity Future. Each night of the program, the lessons will focus on a different aspect of Jesus’ life from both the Old and New Testament.

In addition to the lessons, the children will be participating in craft and science activities, playing games, and will have a snack. When preregistering, please make note of any food allergies so we can have an alternative for your child.

There will be some fun songs to learn, as well as hilarious skits about Professor Montgomery, a crazy, but brilliant scientist, and his two assistants.

Bedford’s own Troop 399 is holding yet another unique fundraiser. The Troop had decided instead of selling the traditional popcorn, they wanted to do more service oriented fundraisers, to help teach the boys to serve others, to be responsible, and helpful. It allows them to help finance the activities they want to do based on how much they help at each activity, rather than on how much product they sell.

 

On April 21st, the boys will be holding a Fill the Trailer Donation Day. The way it works is that you bring things you might donate to a thrift store or other charity and the boys get credit for the items that will be taken to a thrift store. They will pay the boys per pound of the items donated.

So if you’re in the middle of spring cleaning, bring your gently used clothes and small household items to the Lutheran Church of the Master at 860 Northfield Road right next to Giant Eagle. The Troop will be collecting items from 9 am to noon that day.

 

They cannot accept larger items, however, like washers, dryers, or refrigerators.

Troop 399 Holds Chili Cook-Off Fundraiser

 

Bedford’s Boy Scout Troop 399 wants to thank all the people who came out and supported them in the pancake breakfast fundraiser last month.  It was a wonderful success thanks to all of you. They were able to fully fund the rest of their trip to Niagara Falls and the Naval Base.

 

Their next fundraiser will be a chili cook-off held on April 14th from 5:00 to 7:00. It will be at the same location as the pancake breakfast, the Lutheran Church of the Master at 860 Northfield Rd, next to the Giant Eagle.

 

This time, the boys are earning money by serving the guests to help fund their trip to Gettysburg this summer. As Boy Scouts, they are allowed to actually camp on the battle field, in addition to touring the area and learning about this important historic event.

 

Come and taste a variety of chili and vote for your favorite. Some of the chili will be Texas-style (no beans) and some will have beans. There will also be a variety of sides and desserts to enjoy as well. There will be a trophy given to the audience voted chili (and bragging rights till the next chili cook-off).

 

The cost is $10 per person ages 12 and up, and children 11 and under are $6 each.

Come Join Bible Baptist for Resurrection Sunday

 

April 1st is Easter Sunday. Bible Baptist Church, located at 20 Avalon off Columbus, is inviting anyone who does not have a church home to join them for a fellowship breakfast at 9:30. Pastor Mike Aiken will give a short devotional, and then everyone will share breakfast provided by the members. There will also be a short communion service for those who wish to participate as believes in Christ. After breakfast, everyone is invited to join in the morning worship service at 11:00 to celebrate the resurrection of Jesus.

 

Bible Baptist’s normal services are Sunday School for all ages at 9:45, with morning worship starting at 11:00. Sunday evenings there is a prayer meeting at 5:00 before a more causal Sunday evening service. After a time of singing, the young people go downstairs for a time of Bible study, while adults have a separate Bible study.  On April 1st, however, there will be no evening service to give everyone time to enjoy the holiday with their families after church.

There is a nursery available for those who need a place for young wiggly children to play during the service.

 

We hope to meet some more of our neighbors in Bedford.

All your favorite cookies are available, while supplies last. You can get the lemony Savannah Smiles, traditional Trefoils, peanut butter sandwich Do-Si-Dos, coconut, chocolate, and caramel covered Samoas, tasty Tagalongs, and tempting Thin Mints (which are vegan) for $4 a box.

The two newest addition to the line up are the Girl Scout S’Mores and Toffee-Tastic. The S’mores were introduced for the 100th anniversary of selling Girl Scout cookies in 2017. The Toffee-Tastic cookies were added a few years ago to provide a gluten free option. They are both available for $5 a box.

So please, stop by and support the girls. If you are on a diet, all troops will gladly accept donations towards cookies to be sent to our troops overseas!

Bedford’s Boy Scout Troop 399 is hosting a pancake breakfast as a fundraiser on Saturday, March 17th from 9:00 am to noon. By working to raise the money for the trip, it will help reinforce the Boy Scout Law elements of being Thrifty, Cheerful, Courteous, Friendly, Helpful, and Clean. You will be treated to a traditional Boy Scout breakfast of delicious pancakes and savory sausage cooked by the leaders and served by the Scouts. Come and enjoy this all for a donation at the door.

The boys are earning money to help pay for their upcoming trip to New York. The trip will include visiting the US side of Niagara Falls, where they will be hiking in the area. Then they will be headed to the Buffalo Naval Park. The troop will be staying on the USS Little Rock. It is an amazing experience where they get a taste of what life in the Navy is like, including eating Navy food.

It will be held at the Lutheran Church of the Master at 860 Northfield Road in Bedford, right next to Giant Eagle.
