Prep Time: about 15 minutes| Cook Time: 4 minutes per batch| Makes: 4 to 6 servings

 

1 egg

1/2 cup water

1 tablespoon cooking oil

1/2 teaspoon salt

1/4 teaspoon ground black pepper

1 cup all-purpose flour, divided

1/2 cup yellow cornmeal

2 to 3 medium green tomatoes, sliced about 3/8 inch thick ( around 1 pound)

 

  1. In a medium bowl, combine egg, water, cooking oil, salt, and pepper. Add 1/2 cup  of the flour; beat with a wire whisk until smooth. Set aside.
  2. In a shallow bowl, combine remaining flour and cornmeal.
  3. Dip green tomato slices in egg mixture, then in the cornmeal mixture, coating both sides of slices, In a 10-inch skillet, heat the 2 cups of cooking oil over medium- high heat. Cook coated tomato slices, a few at a time, in the hot oil for 4 to 5 minutes or until coating is golden brown; turn once.
  4. Keep fried tomato slices warm in a 300 degree oven while frying  remaining slices. Season to taste.
