Ingredients

For the Marinade

  • ¼ cup olive oil
  • Juice of 1 lemon (about 3 tablespoons)
  • 3 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the Kebabs

  • 2 pounds boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 2 bell peppers (red, yellow, or orange), cut into large chunks
  • 1 large red onion, cut into wedges
  • 2 medium zucchini, sliced into thick rounds
  • 8 ounces whole button or cremini mushrooms
  • 1 pint cherry tomatoes
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, honey, Dijon mustard, smoked paprika, oregano, cumin, salt, and pepper.
  2. Add the chicken to the marinade, toss to coat, cover, and refrigerate for at least 2 hours or up to overnight.
  3. If using wooden skewers, soak them in water for at least 30 minutes before assembling.
  4. Thread the chicken and vegetables onto the skewers, leaving a small space between each piece to help everything cook evenly.
  5. Preheat the grill to medium-high heat (about 400–425°F). Lightly oil the grates.
  6. Grill the kebabs for 12–15 minutes, turning every 3–4 minutes, until the chicken reaches an internal temperature of 165°F and the vegetables are lightly charred and tender.
  7. Remove from the grill and let the kebabs rest for 5 minutes before serving.

Serving Suggestions

Serve with warm pita bread, seasoned rice, grilled corn on the cob, tzatziki sauce, or a fresh cucumber salad.

For the best results, make separate skewers for the chicken and the vegetables. Chicken usually takes a bit longer to cook than peppers, onions, zucchini, and mushrooms, allowing everything to finish perfectly without overcooking.
